Overall, I think it has been a good day so far. A decent night's sleep and getting up two hours later than on a work day had me feeling better about life this morning. Toasting bagels for the Manor's signature breakfast dish, the Spouse and I enjoyed quiet time on the mountain.
I needed a "finger food" dish to go for this afternoon and while standing in line at Wal-Mart last night, decided to make chicken salad for croissants. That I desperately hoped I would remember to by the time I got to Sam's Wholesale Club. Being one who only likes going to the big box stores once a month, I had a goodly list. And if it is not written down, chances are, it will not be bought by self. Fortunately, I was able to remember to pick up the size of croissants needed.
Chicken salad made, the pot yielded about two quarts of good lowfat, low salt chicken broth. Skimmed and bottled, the broth will be wonderful in homemade chicken noodle soup next week. The Spouse has his 6th chemo treatment slated for next Wednesday and chicken noodle soup has been something he has had a taste for in the days following the treatments.
We put up the last new ceiling fan at the Manor in the west study. This room had been destined for a new kitchen originally. However, th old kitchen proved its worth in the fantastic seasonal views we receive in the winter when the leaves are down and the mountains to the north and west of the Manor can be seen. I even managed to get in a couple loads of laundry today.
One day at a time. I hope the panic attacks will get less frequent as my lifestyle changes. Three more days of work and I will be done with that chapter of my life.
