It's butternut squash season, and I couldn't be happier about it! I've loved this creamy winter squash ever since the days my Grandma Denny used to bake it wrapped in foil and then mash it with (lots of) butter, salt and pepper. These days I like a little less butter with my squash, but I still prefer savory butternut squash dishes and this Butternut Squash, Peanut, and Chipotle Soup from The Perfect Pantry really sounds like a Meatless Monday winner. There's lots of flavor going on here from onion, garlic, cumin, peanut butter, and chipotle chiles, and if you sub vegetable stock for the chicken stock this amazing-sounding soup can easily be vegan.
