Frozen "ice cream sandwiches" made from a chewy, homemade Snickerdoodle cookie recipe, with vanilla pudding in the middle. Cinnamon, sugar, vanilla - mmm, perfect summertime treat! To be honest, I'm not even sure I have words to describe this dessert. They say a picture is worth 1000 words, so let's just take a moment to let the photo above whisper to you. See what I mean? If these aren't drool-worthy, well, maybe you don't drool. Or you don't like soft, chewy cinnamon and sugar covered snickerdoodle cookies. Or creamy, sweet vanilla pudding. So now that we've eliminated the fact that there is NO ONE ON EARTH who doesn't love this combination of flavors, did I mention they are frozen into little ice cream sandwiches? Remember those pudding pops we ate as kids? These are like pudding pops meet churros. You're welcome. No, but seriously. The idea for these came to me via temporary pregnancy craving insanity, but I'm not sure I can ever just eat a regular snickerdoodle again. As for the actual cookies, I tested three batches to make sure they were perfectly chewy and cracked to hold all the sugary cinnamon goodness. So if you bake them, trust that they will turn out. Like my own little cookie recipe guarantee.
