I made this for my SLO (San Luis Obispo) family, 18 in all. This is the recipe whittled down to serve 4. Because there’s no dairy, it’s a great buffet Chopped, so feel free to add extra of the Arugula, Avocado, Green Beans, Lemon Juice etc. to make a Chopped for many! Since there was such a large quanity of Chopped ingredients I Chopped them into two large bowls and then combined them.

I know this is a long list of ingredients. But as you can see they are readily available (fast/easy to Chop) and are used in many of my Chopped recipes. Believe me they won’t go to waste! The dressing is what makes this Chopped unique.

If you are interested in the ingredient amounts for a large gathering, check out Big Buffet Side Chopped. But I thought this version was much more “Chopper Friendly”.

Serves 4

Bowl Ingredients:
2 cups Hearts of Romaine, Chopped
1 cup Arugula, Chopped
1 cup Kale, Chopped
1 cup cooked Brown Rice, cooled. See recipe in Basic Additions, “Grains”
½ cup Chopped Green Beans, microwave steamed. See recipe in Basic Additions, “Veggies”
1/2 Avocado, Chopped
1 cup Garbanzo Beans, drained and rinsed
8 Grape Tomatoes, halved or quartered
3 Green Onions, Chopped
3-4 Radishes, Chopped finely
12 Baby Cut Carrots, Chopped
¼ cup Chopped Red Cabbage
4 Queen Sized Pitted Green Olives, Chopped finely
2 Tablespoons Dried Cranberries, Yes! Chopped. They go farther.

Zing Factor:
1 Tablespoon Chopped Fresh Basil

Dressing Ingredients:
½ Tablespoon Olive Oil
1-2 Garlic Cloves, minced
½ teaspoon Molasses
5 Sun Dried Tomatoes, packed in Olive Oil, Chopped
1 teaspoon Anchovy Paste
Juice of 1 Lemon
1 teaspoon Dijon Mustard or more to taste
Kosher or Sea Salt, optional because of the Anchovy Paste
Freshly Ground Black Pepper, to taste

Zing Factor:
1-2 teaspoons Fresh Chopped Dill or Dried Dill

Bowl Ingredients…Chop’em and Drop’em as directed including the Zing Factor, ifdesired, into a Large Serving Bowl.

Dressing Ingredients: In a small microwave safe bowl add the Olive Oil, Garlic, Molasses, Sun Dried Tomatoes and Anchovy Paste. Microwave on high for 20 seconds. This mellows the garlic. Add the Lemon Juice, Dijon Mustard, Zing Factor, if desired, and Salt and Pepper. Whisk to emulsify the dressing.

Pour the dressing over the Bowl Ingredients, toss, toss, and toss some more. “Get Your Spoons Ready” and enjoy!
